Carving Cart Restaurant was a well-known Las Vegas Strip dining spot that operated from the late 1970s into at least 1987, inside the El Morocco Motel at 2975 Las Vegas Boulevard, directly across from the Stardust. Positioned along one of the Strip’s busiest corridors, the restaurant served a steady mix of motel guests, tourists, and locals seeking a satisfying, no-frills meal. Carving Cart evolved from an earlier concept, Jack Denison’s Copper Cart, opened around 1965 by Jack Denison. The Copper Cart built its reputation on generous portions, Western-tinged branding, and an approachable “come as you are” atmosphere. By the late 1970s, following Denison’s departure, the restaurant rebranded as the Carving Cart, a name that more directly reflected its core dining concept. Under the Carving Cart identity, the restaurant emphasized freshly carved meats as its centerpiece. Prime rib, roast beef, turkey, and ham were prepared in-house and sliced to order, often from a visible carving station that added both presentation and appeal. This style of service aligned with the era’s dining preferences, offering abundance, value, and a touch of showmanship without the formality of high-end casino restaurants. The atmosphere remained casual and accessible. With practical seating, warm lighting, and efficient service, the Carving Cart was designed to accommodate a steady flow of diners throughout the day and into the night. The menu extended beyond carved meats to include classic American sides such as baked potatoes, vegetables, salads, and bread service, along with lighter coffee shop fare. As part of the El Morocco Motel—a distinctive mid-century property known for its Googie-style architecture—the restaurant contributed to a broader ecosystem of affordable Strip-side lodging and dining. While mega-resorts were reshaping Las Vegas, establishments like the Carving Cart continued to serve everyday visitors seeking convenience and value. Though it ultimately disappeared as the Strip evolved, Carving Cart Restaurant remains a strong example of vintage Las Vegas dining when evolving concepts, bold roadside identity, and dependable meals defined the experience.
