Venue History

Burger Bar was an influential gourmet burger restaurant located inside The Shoppes at Mandalay Place, the retail corridor connecting Mandalay Bay and Luxor on the Las Vegas Strip. Opened in 2004 by acclaimed French chef Hubert Keller, Burger Bar helped launch the upscale burger craze that would soon spread across Las Vegas and throughout the country. Keller was already nationally known for his sophisticated San Francisco restaurant Fleur de Lys when Mandalay Bay invited him to Las Vegas. While developing a second Fleur de Lys at the resort, he was unexpectedly offered another space inside the newly built Mandalay Place. Rather than create another fine-dining restaurant, Keller took a risk on a concept centered almost entirely on hamburgers—an unusual move for a celebrated chef at the time. The experiment became an immediate success. Burger Bar elevated the familiar hamburger by allowing guests to build highly customized creations. Diners could choose from premium beef as well as buffalo, turkey, lamb, chicken, salmon, and vegetarian options, then add an extensive selection of cheeses, sauces, vegetables, and gourmet toppings. Its more extravagant offerings included ingredients such as foie gras, truffles, lobster, and premium Kobe-style beef. The restaurant also became known for hand-cut fries, decadent milkshakes, desserts, and an extensive beer program featuring numerous draft and bottled selections. Its atmosphere remained intentionally casual, combining dark woods, booth seating, a prominent bar, and glowing neon accents with the energy of the busy Mandalay Place walkway. Burger Bar’s success proved that a chef-driven restaurant could treat the hamburger with the same creativity once reserved for fine dining. Its influence became especially noticeable as gourmet burger concepts rapidly appeared throughout the Strip during the late 2000s. The restaurant temporarily closed during the COVID-19 shutdowns in 2020. In January 2021, Keller announced that he was ending his relationship with both Burger Bar and Fleur, and Burger Bar never reopened. After Burger Bar permanently closed, its longtime Mandalay Place space was eventually taken over by Wahlburgers, which opened there in March 2023, continuing the location’s nearly two-decade tradition as a destination for specialty burgers on the Las Vegas Strip. Burger Bar is remembered as a pioneering Las Vegas restaurant that helped transform the humble hamburger into a celebrity-chef attraction and inspired an entire generation of upscale burger restaurants.
